Spring Vegetable Frittata – a light egg dish with fresh vegetables and cheese.
Ingredients
Scale
8 eggs
¼ cup milk
1 tbsp oil
1 cup asparagus
½ cup tomatoes
½ cup spinach
¼ cup onion
½ cup cheese
½ tsp salt
¼ tsp pepper
Instructions
1. Whisk eggs
2. Cook vegetables
3. Add egg mixture
4. Top with cheese
5. Bake until set
6. Slice and serve
Notes
Use fresh vegetables
Do not overcook eggs
Let rest before slicing
