Ingredients

1 pie crust
2 cups ricotta cheese
3/4 cup sugar
3 eggs
1 teaspoon vanilla
1 teaspoon lemon zest
1/4 cup flour
Pinch of salt
Instructions
1. Preheat oven to 350°F.
2. Mix ricotta and sugar.
3. Add eggs one by one.
4. Stir in vanilla, zest, flour, salt.
5. Pour into crust.
6. Bake until set.
7. Cool and refrigerate before serving.
Notes
Drain ricotta for best texture.
Do not overbake.
Chill before slicing.
Serve cold.
