Ingredients
1 lb large shrimp, peeled and deveined
8 oz mushrooms, sliced
3 tablespoons basil pesto
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice
Parmesan cheese for serving (optional)
Fresh parsley or basil for garnish
Instructions
1. Heat olive oil and butter in skillet over medium heat.
2. Cook mushrooms until golden and tender.
3. Add garlic and cook until fragrant.
4. Add shrimp, season, and cook until pink.
5. Stir in pesto and lemon juice, then serve warm.
Notes
Do not overcook shrimp.
Best served immediately.
