Ingredients
1 zucchini grated
1 teaspoon salt
4 eggs
1 cup milk
1 cup shredded cheese
1/2 cup Parmesan cheese
1/2 onion chopped
2 cloves garlic
1/2 teaspoon black pepper
1/2 teaspoon oregano
1 tablespoon olive oil
Instructions
1. Preheat oven to 375°F.
2. Squeeze zucchini dry.
3. Sauté onion and garlic.
4. Whisk eggs and milk.
5. Mix all ingredients together.
6. Bake until set and golden.
Notes
Remove zucchini moisture well.
Let quiche rest before slicing.
Add extra cheese for richer flavor.
