Description

Fresh berry spinach salad made with baby spinach, mixed berries, crunchy nuts, and a light honey balsamic vinaigrette.


Ingredients

Scale

5 cups baby spinach

1 cup strawberries, sliced

1/2 cup blueberries

1/2 cup raspberries

1/4 cup red onion, sliced

1/3 cup sliced almonds

1/3 cup feta cheese

3 tablespoons olive oil

1 tablespoon honey

1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Wash and dry spinach and berries.

2. Combine all salad ingredients in bowl.

3. Whisk vinaigrette ingredients.

4. Drizzle over salad and toss gently.

5. Serve immediately.

Notes

Serve fresh for best taste.

Keep dressing separate if prepping ahead.

Use chilled ingredients.
