Description

Zucchini Parmesan foil packets made with garlic, herbs, olive oil, and cheese for an easy grilled or baked side dish.


Ingredients

Scale

3 zucchinis sliced

2 tablespoons olive oil

3 cloves garlic

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon Italian seasoning

1/2 teaspoon paprika

1/3 cup Parmesan cheese

1 tablespoon butter

Fresh parsley


Instructions

1. Preheat oven or grill.

2. Toss zucchini with seasonings.

3. Divide into foil packets.

4. Top with Parmesan and butter.

5. Seal tightly.

6. Cook until tender.

Notes

Seal packets well to trap steam.

Do not overcook zucchini.

Add cheese after cooking for extra melt.
