Description

Soft zucchini cookies made with warm cinnamon spice, shredded zucchini, and chocolate chips for a moist homemade bakery-style cookie recipe.


Ingredients

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1 cup shredded zucchini

1 cup chocolate chips or raisins


Instructions

1. Preheat oven and prepare baking sheets.

2. Whisk dry ingredients together.

3. Cream butter and sugars until fluffy.

4. Mix in remaining ingredients and fold in zucchini.

5. Bake cookies until lightly golden.

Notes
