Ingredients
2 zucchinis grated
2 carrots grated
1 teaspoon salt
2 eggs
1/2 cup flour
1/3 cup Parmesan cheese
2 green onions
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon paprika
2 to 3 tablespoons olive oil
Instructions
1. Grate vegetables and salt them.
2. Squeeze out excess moisture.
3. Mix all ingredients together.
4. Pan fry until golden on both sides.
5. Drain and serve warm.
Notes
Remove moisture for crisp fritters.
Do not overcrowd pan.
Serve immediately for best texture.
