Description

Moist zucchini bread made with fresh shredded zucchini, cinnamon, and simple pantry ingredients for a soft homemade quick bread perfect for breakfast or snacks.


Ingredients

Scale

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon nutmeg

2 large eggs

3/4 cup granulated sugar

1/2 cup brown sugar

1/2 cup vegetable oil

1 teaspoon vanilla extract

2 cups shredded zucchini

1/2 cup chopped walnuts or pecans (optional)


Instructions

1. Preheat oven and grease loaf pan.

2. Whisk dry ingredients together.

3. Mix eggs, sugars, oil, and vanilla.

4. Combine wet and dry ingredients and fold in zucchini.

5. Pour into loaf pan and bake until golden and set.

Notes

Do not squeeze zucchini dry.

Cool before slicing.

Store tightly wrapped.
