Description

Creamy Tuscan tortellini salad made with cheese tortellini, fresh vegetables, olives, and a rich Italian-style creamy dressing.


Ingredients

Scale

12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup baby spinach, chopped

1/2 cup black olives, sliced

1/2 cup roasted red peppers

1/4 cup red onion, sliced

1/2 cup mozzarella pearls

1/4 cup parmesan cheese

1/2 cup mayonnaise

1/4 cup Greek yogurt

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1 teaspoon Italian seasoning


Instructions

1. Cook tortellini and cool.

2. Slice vegetables and combine in bowl.

3. Add cheese and tortellini.

4. Whisk dressing ingredients.

5. Toss everything together and chill.

Notes

Chill before serving for best flavor.

Do not overcook tortellini.

Add fresh herbs before serving.

Store refrigerated.
