Strawberry Lemon Loaf – a moist and bright cake with fresh strawberries and citrus glaze.
Ingredients
1 ½ cups flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup butter, softened
¾ cup sugar
2 eggs
1 tbsp lemon zest
2 tbsp lemon juice
1 tsp vanilla extract
½ cup milk
1 cup strawberries, chopped
1 cup powdered sugar
2 tbsp lemon juice
Instructions
1. Preheat oven and prepare loaf pan
2. Mix dry ingredients
3. Cream butter and sugar
4. Add eggs, lemon, and vanilla
5. Combine with dry ingredients and milk
6. Fold in strawberries
7. Bake 50–55 minutes
8. Cool completely
9. Prepare glaze
10. Drizzle glaze and serve
Notes
Use fresh strawberries
Do not overmix batter
Let cool before glazing
