Description

Strawberry Banana Baked Oatmeal – a warm, cozy breakfast bake made with oats, ripe bananas, and fresh strawberries.


Ingredients

Scale

2 cups rolled oats

2 medium ripe bananas, mashed

1 ½ cups strawberries, sliced

2 cups milk

2 large eggs

¼ cup maple syrup or honey

2 tbsp melted butter or coconut oil

1 tsp vanilla extract

1 ½ tsp baking powder

1 tsp cinnamon

½ tsp salt

½ cup chopped nuts (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease baking dish

2. Mash bananas in a large bowl

3. Add milk, eggs, maple syrup, butter, and vanilla

4. Whisk until smooth

5. Stir in oats, baking powder, cinnamon, and salt

6. Fold in strawberries

7. Pour into baking dish and spread evenly

8. Top with extra strawberries if desired

9. Bake for 35–40 minutes until set and golden

10. Let cool slightly before serving

Notes

Use ripe bananas for natural sweetness

Do not overmix to keep texture soft

Add nuts for crunch

Use frozen strawberries if fresh are unavailable
