Description

Ingredients

1/4 teaspoon black pepper

6 cups chopped romaine lettuce

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup corn kernels

1/2 cup black beans, drained and rinsed

1/4 cup red onion, sliced

Tortilla strips for topping

Fresh cilantro for garnish

Lime Dressing:

3 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon honey

1/2 teaspoon cumin

Pinch of salt


Instructions

1. Season shrimp with spices and olive oil.

2. Cook shrimp in skillet until pink and fully cooked.

3. Whisk dressing ingredients together.

4. Arrange salad ingredients in serving bowl.

5. Top with shrimp, tortilla strips, cilantro, and dressing.

Notes
