Description
Classic melt-in-your-mouth shortbread cookies made with rich unsalted butter, confectioners’ sugar, vanilla, and flour.
Ingredients
10 tbsp unsalted butter unsalted butter, at room temperature 142g
1/2 cup confectioners’ sugar
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour 180g
1/2 teaspoon kosher salt optional
Instructions
1. Beat 10 tbsp room-temperature unsalted butter and 1/2 cup confectioners’ sugar until smooth and creamy.
2. Mix in 1/2 tsp vanilla extract and 1/2 tsp kosher salt.
3. Gradually add 1 1/2 cups all-purpose flour on low speed just until a soft dough forms.
4. Roll dough between parchment paper to 1/3-inch thickness and chill for 30 minutes.
5. Cut into shapes, place on a lined baking sheet, and prick tops with a fork.
6. Bake at 350°F (175°C) for 12 to 15 minutes until edges are pale golden; cool on pan for 10 minutes then transfer to a wire rack.
Notes
Use confectioners’ sugar for a melt-in-your-mouth crumb. Chill cut shapes before baking to prevent spreading.
