Description
Creamy old-fashioned easy rice pudding made on the stovetop with tender white rice, whole milk, sweet golden raisins, egg custard, butter, and pure vanilla.
Ingredients
1 ½ cups cold water
¾ cup uncooked white rice
2 cups milk, divided
⅓ cup white sugar
¼ teaspoon salt
1 large egg, beaten
⅔ cup golden raisins
1 tablespoon butter
½ teaspoon vanilla extract
Instructions
1. Bring water and rice to a boil in a saucepan, cover, and simmer on low for 15 to 20 minutes until water is absorbed.
2. Stir in 1 1/2 cups milk, sugar, and salt; cook uncovered over medium heat for 15 to 20 minutes until thick and creamy.
3. Whisk beaten egg with remaining 1/2 cup milk, then temper by stirring in 2 tbsp of hot rice mixture.
4. Pour egg mixture into saucepan, add golden raisins, and cook on low for 2 minutes while stirring.
5. Remove from heat and stir in butter and vanilla extract until melted and smooth.
6. Rest for 10 minutes to thicken; serve warm or chilled.
Notes
Temper the egg slowly to prevent curdling. Pudding will thicken more as it cools.
