Description
Rhubarb Upside Down Cake – soft vanilla cake topped with caramelized tangy rhubarb.
Ingredients
2 cups rhubarb, chopped
½ cup brown sugar
3 tbsp butter
1 tbsp honey optional
1 ½ cups flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup butter, softened
¾ cup sugar
2 eggs
1 tsp vanilla
½ cup milk
Instructions
1. Prepare rhubarb topping in pan
2. Mix dry ingredients
3. Cream butter and sugar
4. Add eggs and vanilla
5. Combine with dry ingredients and milk
6. Pour over rhubarb
7. Bake until golden
8. Cool and flip onto plate
9. Serve
Notes
Use fresh rhubarb for best flavor
Let cool before flipping
Do not overmix batter
Serve warm for best taste
