Rhubarb Cake with Vanilla Glaze – a soft cake with tangy rhubarb and sweet vanilla topping.


Ingredients

Scale

2 cups flour

1 cup sugar

2 tsp baking powder

½ tsp salt

1 cup milk

2 eggs

½ cup butter

1 tsp vanilla

2 cups rhubarb

1 cup powdered sugar

2 tbsp milk

½ tsp vanilla


Instructions

1. Mix dry ingredients

2. Mix wet ingredients

3. Combine and fold in rhubarb

4. Bake 35–40 minutes

5. Cool cake

6. Prepare glaze

7. Drizzle glaze and serve

Notes

Use fresh rhubarb

Do not overbake

Cool before glazing
