Description
Soft and pillowy pumpkin spice sugar cookies made with real butter, vanilla, and rolled in a fragrant pumpkin pie spice sugar coating.
Ingredients
2 ¼ cups white sugar, divided, or as needed
1 ½ cups butter, softened
2 large eggs
2 teaspoons vanilla extract
3 ½ cups all-purpose flour
1 tablespoon pumpkin pie spice
1 teaspoon baking powder
1 teaspoon salt

Instructions
1. Preheat oven to 350°F (175°C) and coat baking sheets with cooking spray.
2. Whisk ¼ cup divided white sugar and 1 tbsp pumpkin pie spice in a small bowl.
3. Cream softened butter and remaining 2 cups white sugar together until light and fluffy.
4. Beat in eggs one at a time, then blend in vanilla extract.
5. Stir in all-purpose flour, baking powder, and salt until a soft dough forms.
6. Roll dough into 1-inch balls, roll in spiced sugar, place 2 inches apart on sheets, and bake for 10 to 12 minutes until edges are set.
Notes
Do not overbake to ensure cookies stay soft and tender. Use softened butter for proper creaming.
