Crisp Topping:

1/2 cup unsalted butter, softened

1 cup all purpose flour

1/2 cup brown sugar, packed

1/4 tsp salt

1 tsp pumpkin pie spice

3/4 cup chopped pecans

1/4 cup rolled oats

Pumpkin Filling:

15 ounce can pumpkin puree (not pie filling)

1 cup granulated sugar

3 large eggs

2 tsp vanilla extract

1 1/2 tsp pumpkin pie spice

1/2 tsp salt

2/3 cup heavy cream


Instructions

1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.

2. Whisk pumpkin puree, granulated sugar, eggs, vanilla extract, 1 1/2 tsp pumpkin pie spice, 1/2 tsp salt, and heavy cream in a bowl until smooth.

3. Pour pumpkin filling into the prepared baking dish.

4. Combine softened butter, flour, brown sugar, 1/4 tsp salt, 1 tsp pumpkin pie spice, chopped pecans, and rolled oats in a bowl until crumbly.

5. Scatter crumble topping evenly over the pumpkin filling.

6. Bake for 45 to 50 minutes until center is set and top is golden brown; cool 15 minutes before serving.

Notes

Use pure canned pumpkin puree for the best thick custard texture. Rest for 15 minutes after baking so filling sets.
