Description
Moist spiced pumpkin muffins stuffed with a rich cream cheese center and topped with a brown sugar streusel crumble.
Ingredients
For the streusel:
Cooking spray or paper muffin liners
1/3 cup all-purpose flour
1/4 cup packed dark or light brown sugar
1 pinch kosher salt
2 tablespoons unsalted butter, melted
For the cream cheese mixture:
1 large egg, at room temperature
8 ounces cold cream cheese
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
For the muffins:
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
2 large eggs
1 (15-ounce) can pumpkin purée (not pumpkin pie filling)
1/2 cup neutral oil, such as canola or vegetable oil
1 tablespoon Pumpkin Pie Spice
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
Instructions
1. Preheat oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
2. Mix 1/3 cup flour, 1/4 cup brown sugar, 1 pinch salt, and 2 tbsp melted butter for streusel.
3. Beat 8 oz cream cheese, 1/3 cup granulated sugar, 1 egg, 1 tsp vanilla, and 1/4 tsp salt until smooth.
4. Whisk 3/4 cup granulated sugar, 1 tsp vanilla, 1/2 tsp salt, 2 eggs, canned pumpkin, oil, and pumpkin pie spice in a large bowl.
5. Fold 1 3/4 cups flour, baking soda, and baking powder into pumpkin mixture until combined.
6. Fill liners with batter, dollop cream cheese filling in center, scatter streusel on top, and bake for 20 to 22 minutes.
Notes
Store muffins in the refrigerator due to cream cheese filling. Use 100% pure pumpkin purée.
