Description
Chewy pumpkin cookie bars packed with pumpkin pie spice, brown sugar, and semisweet chocolate chips baked in a 9×13 pan.
Ingredients
1 cup unsalted butter 226 grams, melted (2 sticks)
1 cup brown sugar 213 grams
¾ cup granulated sugar 150 grams
1¼ cups pumpkin puree 284 grams — NOT pumpkin pie filling!
1 large egg 50 grams
2 teaspoons pure vanilla extract 8 grams
2½ cups all-purpose flour 300 grams
1 tablespoon pumpkin pie spice 9 grams
1 teaspoon baking soda 6 grams
½ teaspoon kosher salt
1 cup semisweet chocolate chips 170 grams
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
2. Whisk melted butter, brown sugar, and granulated sugar together until smooth.
3. Whisk in pumpkin puree, egg, and vanilla extract.
4. Stir in all-purpose flour, pumpkin pie spice, baking soda, and kosher salt just until combined.
5. Fold in semisweet chocolate chips using a rubber spatula.
6. Spread batter into prepared pan, bake for 25 to 30 minutes until edges are golden, and cool completely before slicing.
Notes
Use pure pumpkin puree, not pie filling. Use melted butter and brown sugar for a chewy texture instead of cakey.
