Description

Cozy, wholesome Pumpkin Baked Oatmeal naturally sweetened with pure maple syrup, packed with autumn spices, and topped with crunchy pecans and sweet glaze.

Oatmeal Bake:

1 and 1/3 cups (320g/ml) milk (dairy or nondairy)

2 large eggs, at room temperature

1/2 cup (160g/120ml) pure maple syrup

1/4 cup (4 Tbsp; 56g) unsalted butter, melted and slightly cooled

1 cup (227g) pumpkin puree

1 teaspoon pure vanilla extract

3 cups (255g) old-fashioned whole rolled oats

1 teaspoon baking powder

2 teaspoons pumpkin pie spice

1 teaspoon ground cinnamon

1/4 teaspoon salt

optional: 1/2 cup (60g) chopped pecans*

Optional Maple Glaze Topping:

3/4 cup (90g) confectioners’ sugar, sifted

2 Tablespoons (43g/30ml) pure maple syrup

1 Tablespoon milk (dairy or nondairy)


Instructions

1. Preheat oven to 375°F (190°C), grease an 8 or 9-inch square baking dish, and whisk milk, eggs, maple syrup, melted butter, pumpkin puree, and vanilla in a bowl.

2. Fold in rolled oats, baking powder, pumpkin pie spice, cinnamon, and salt until evenly combined.

3. Pour into prepared dish, top with optional chopped pecans, and bake for 30 to 35 minutes until set.

4. Whisk confectioners’ sugar, maple syrup, and milk into a smooth glaze.

5. Drizzle glaze across warm baked oatmeal, rest for 10 minutes, slice into squares, and serve warm.

Notes

Use old-fashioned rolled oats for best texture. Let cool for 10 minutes before slicing for clean squares.
