Description

Elegant poached pear puff pastry made with honey-poached pears, cinnamon, vanilla bean, and golden flaky puff pastry.


Ingredients

Poached Pears:

4 medium pears

5 cups water

1 ½ cups granulated sugar

3 Tablespoon honey

3 cinnamon sticks

½ vanilla bean,, split lengthwise

Egg Wash:

1 large egg

½ Tablespoon heavy cream, , or whole milk

pinch kosher salt

Assembly:

1 sheet store bought frozen puff pastry,, thawed*


Instructions

1. Combine water, granulated sugar, honey, cinnamon sticks, and split vanilla bean in a large pot over medium heat until sugar dissolves.

2. Peel and halve 4 pears, submerge into simmering liquid, poach for 15-20 minutes until tender, and cool completely.

3. Cut 1 sheet thawed puff pastry into thin strips and wrap around cold, drained pear halves.

4. Whisk 1 egg, 1/2 tbsp heavy cream, and a pinch of kosher salt to make an egg wash.

5. Place wrapped pears on a parchment-lined baking sheet and brush evenly with egg wash.

6. Bake at 400°F (200°C) for 20 to 25 minutes until puff pastry is golden brown and flaky; serve warm.

Notes

Cool pears completely before wrapping to keep puff pastry crisp. Bake in a hot 400°F oven.
