Description

Melt-in-your-mouth buttery Pecan Sandies loaded with finely chopped pecans, brown sugar, vanilla, and crowned with a toasted pecan half.


Ingredients

2 sticks butter, softened (1 cup)

1/2 cup packed light brown sugar

1/4 cup granulated sugar

1 1/2 tsp. vanilla extract

1/2 tsp. kosher salt

2 cups all-purpose flour

1 cup pecan halves, finely chopped

24 pecan halves


Instructions

1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

2. Beat softened butter, brown sugar, and granulated sugar for 2 minutes until creamy, then beat in vanilla extract and kosher salt.

3. Add all-purpose flour on low speed just until combined, then fold in finely chopped pecans.

4. Scoop dough and roll into 24 smooth balls; arrange 2 inches apart on prepared sheets.

5. Press 1 pecan half into the center of each ball, flattening slightly into a thick disc.

6. Bake for 15 to 18 minutes until edges are golden; cool on baking sheet for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Chop internal pecans finely. Let cookies rest on the baking sheet for 10 minutes before moving to prevent crumbling.
