Description

Authentic Southern Pecan Pralines made with brown sugar, white sugar, butter, and chopped pecans that melt in your mouth with sweet caramel crunch.


Ingredients

Scale

1 cup brown sugar

1 cup white sugar

1/3 cup water

1 tablespoon butter

2 cups chopped pecans


Instructions

1. Line two baking sheets with parchment paper, and bring brown sugar, white sugar, and water to a boil in a heavy saucepan over medium heat.

2. Cook without stirring until candy thermometer reaches 236°F to 240°F (soft-ball stage).

3. Remove from heat, stir in butter and chopped pecans, and rest for 1 minute.

4. Beat vigorously with a wooden spoon for 2 to 3 minutes until mixture turns opaque and begins to thicken.

5. Quickly drop rounded tablespoons of candy onto parchment paper.

6. Let cool undisturbed for 15 to 20 minutes until completely firm and set.

Notes

Use a candy thermometer for best results. Work quickly when dropping onto parchment before candy hardens.
