Description
An elegant French pear tart made with flaky puff pastry, sweet cream cheese, sliced Bartlett, d’Anjou, and red pears, and turbinado sugar.
Ingredients
1 sheet frozen puff pastry – thawed, unfolded, and lightly rolled
2 Bartlett pears, halved and cored
2 d’Anjou pears, halved and cored
1 red pear, halved and cored
2 tablespoons white sugar
½ lemon, juiced
½ (8 ounce) package cream cheese, softened
½ cup confectioners’ sugar
½ teaspoon vanilla extract
1 tablespoon turbinado sugar
Instructions
1. Preheat oven to 400°F (200°C) and place rolled puff pastry on a parchment-lined baking sheet, scoring a 1/2-inch border.
2. Thinly slice pears and toss in a bowl with 2 tbsp white sugar and fresh lemon juice.
3. Beat softened cream cheese, confectioners’ sugar, and vanilla extract in a bowl until smooth.
4. Spread cream cheese mixture inside the pastry border and arrange sliced pears in overlapping rows.
5. Sprinkle turbinado sugar over fruit and pastry edges.
6. Bake at 400°F for 22 to 25 minutes until puffed and golden brown; cool 10 minutes before slicing.
Notes
Slice pears thinly for even cooking. Keep puff pastry cold until ready to assemble.
