Description

Moist and tender pear streusel coffee cake loaded with fresh pears, buttermilk, cinnamon, ginger, and a crunchy pecan crumb topping.


Ingredients

2 1/2 cups flour

3/4 cup sugar

1 cup brown sugar

1 teaspoon kosher salt

1 teaspoon cinnamon

1/2 teaspoon ginger

3/4 cup canola oil

1 slightly beaten egg

1 teaspoon vanilla

1 cup buttermilk

1 teaspoon baking soda

1 teaspoon baking powder

2 cups chopped ripe,peeled and cored pears

1/2 teaspoon ground ginger

1 cup chopped pecans


Instructions

1. Preheat oven to 350°F (175°C), grease a 9×13-inch pan, and mix flour, sugars, salt, cinnamon, ginger, and canola oil until crumbly; reserve 3/4 cup for topping.

2. Add egg, vanilla, buttermilk, baking soda, and baking powder to the remaining crumb mixture and beat until smooth.

3. Fold chopped pears into the thick cake batter.

4. Toss reserved crumb mixture with ground ginger and chopped pecans in a bowl.

5. Spread batter into the pan, scatter pecan streusel over top, and bake for 38 to 45 minutes until set.

6. Cool in pan on a wire rack for 20 minutes before slicing into squares.

Notes

Chop pears uniformly so they suspend evenly in the batter. Let cool 20 minutes before slicing.
