Description

Wholesome spiced pear oat bars packed with pureed and diced pears, rolled oats, creamy nut butter, cinnamon, ginger, and cloves.


Ingredients

4 medium pears, divided

1/2 cup apple sauce

1/2 cup almond butter, cashew butter, or peanut butter

2 teaspoons pure vanilla extract

2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

3/4 cup oat flour

1/2 cup rolled oats

3/4 teaspoon baking powder


Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.

2. Puree 2 pears and finely dice the remaining 2 pears.

3. Whisk pear puree, 1/2 cup applesauce, 1/2 cup nut butter, and 2 tsp vanilla extract in a large bowl.

4. Whisk oat flour, rolled oats, cinnamon, ginger, cloves, salt, and baking powder in a separate bowl.

5. Combine dry ingredients with wet mixture, then fold in diced pears.

6. Spread batter into prepared pan, bake at 350°F for 30 to 35 minutes until set, and cool completely before slicing.

Notes

Puree half the pears and dice the rest for the best texture. Cool completely before slicing for clean bars.
