Description

Soft and fluffy pear muffins loaded with diced fresh fruit, warm cinnamon and nutmeg, and a sweet streusel crumble topping.


Ingredients

Scale

1 1/2 cups all-purpose flour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 cup vegetable oil

2/3 cup granulated sugar

2 eggs

1/2 tsp vanilla extract

1 1/4 cup peeled and diced pears

Streusel Topping:

3 TBSP granulated sugar

3 TBSP brown sugar

2 TBSP all-purpose flour

1/2 tsp ground cinnamon

24 TBSP vegetable oil


Instructions

1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin.

2. Mix 3 tbsp granulated sugar, 3 tbsp brown sugar, 2 tbsp flour, 1/2 tsp cinnamon, and 2-4 tbsp vegetable oil for streusel.

3. Whisk 1 1/2 cups flour, baking soda, baking powder, salt, 1/2 tsp cinnamon, and nutmeg in a medium bowl.

4. Whisk 1/2 cup vegetable oil, 2/3 cup granulated sugar, 2 eggs, and 1/2 tsp vanilla extract in a large bowl.

5. Fold dry ingredients gently into wet mixture, then fold in 1 1/4 cups peeled and diced pears.

6. Divide into liners, top with streusel, bake at 375°F for 18 to 20 minutes, and cool on a wire rack.

Notes

Dice fruit small for uniform distribution. Do not overmix batter to keep muffins light and fluffy.
