Description
Moist and tender pear gingerbread loaf packed with fresh diced pears, ground ginger, cloves, and sweet vanilla.
Ingredients
1 cup peeled, cored, and chopped pears
½ cup white sugar
½ teaspoon ground ginger
¼ teaspoon ground cloves
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder
⅓ cup vegetable oil
2 large eggs, beaten
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and grease an 8×4-inch loaf pan with parchment paper.
2. Toss chopped pears with ground ginger and ground cloves in a small bowl until coated.
3. Whisk white sugar, vegetable oil, beaten eggs, and vanilla extract together in a large bowl.
4. Whisk flour, baking soda, salt, and baking powder in a bowl, then fold into wet ingredients.
5. Gently stir spiced pears into the batter, then pour into the prepared loaf pan.
6. Bake for 40 to 45 minutes until a toothpick comes out clean; cool on a wire rack before slicing.
Notes
Chop pears uniformly so they suspend evenly. Cool completely before slicing for neat cuts.
