Description
Silky and delicate French pear clafoutis loaded with caramelized sliced pears, whole milk, eggs, pure vanilla, cinnamon, and fresh lemon zest.
Ingredients
For the Pears:
1 tablespoon salted butter, room temp
3 cups cored/peeled/thinly sliced large ripe pears
¼ cup apple juice
⅓ cup granulated sugar
For the Batter:
1 ¼ cups whole milk
⅔ cups granulated sugar, divided
3 large eggs
1 tablespoon pure vanilla extract
⅛ teaspoon table salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup all purpose flour, scooped and leveled for correct measuring
1 tablespoon fresh lemon zest, from 2 lemons
Instructions
1. Sauté sliced pears in butter, apple juice, and 1/3 cup sugar for 8 to 10 minutes until tender; arrange in a buttered 9-inch dish.
2. Preheat oven to 350°F (175°C).
3. Whisk whole milk, half of the 2/3 cup sugar, eggs, vanilla extract, and salt until smooth.
4. Sift in flour, cinnamon, and nutmeg; whisk until lump-free, then stir in fresh lemon zest.
5. Pour custard batter over arranged pears and bake for 40 to 45 minutes until puffed and set in the center.
6. Cool for 15 minutes, dust with remaining granulated sugar, and serve warm.
Notes
Sauté pears first to remove excess moisture. Do not overbake; center should have a slight custard wobble.
