Description
Moist and tender spiced pear bread loaded with ripe chopped pears, warm ground cinnamon, vanilla, and chopped walnuts.
Ingredients
3 large eggs, room temperature
1–1/2 cups sugar
3/4 cup vegetable oil
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
4 cups finely chopped peeled ripe pears (about 4 medium)
1 teaspoon lemon juice
1 cup chopped walnuts
Instructions
1. Preheat oven to 350°F (175°C) and grease two 8×4-inch loaf pans with cooking spray.
2. Beat 3 room-temperature eggs, 1 1/2 cups sugar, 3/4 cup vegetable oil, and 1 tsp vanilla extract in a large bowl.
3. Whisk 3 cups flour, 2 tsp baking powder, 2 tsp cinnamon, 1 tsp baking soda, and 1 tsp salt in a separate bowl.
4. Toss 4 cups finely chopped pears with 1 tsp lemon juice in a small bowl.
5. Combine dry ingredients into wet mixture, then fold in chopped pears and 1 cup chopped walnuts.
6. Divide batter into pans and bake for 50 to 60 minutes until a toothpick inserted in center comes out clean.
Notes
Toss fruit in lemon juice to prevent browning. Recipe yields two 8×4-inch loaves.
