Peanut butter zucchini baked oatmeal made with oats, grated zucchini, peanut butter, and maple syrup for a healthy breakfast bake.
Ingredients
2 cups rolled oats
1 1/2 cups grated zucchini squeezed
1/2 cup peanut butter
2 eggs
1 1/2 cups milk
1/3 cup maple syrup
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chocolate chips optional
Instructions
1. Preheat oven and grease dish.
2. Whisk wet ingredients.
3. Add oats and dry ingredients.
4. Fold in zucchini.
5. Add mix-ins.
6. Pour into dish.
7. Bake until set.
8. Cool and serve.
Notes
Squeeze zucchini well.
Let cool before slicing.
Add nuts or chocolate chips.
Store refrigerated for best texture.
