Description

A delightful fusion of a classic peach cobbler and a chewy, spiced cookie, finished with a sweet vanilla-peach glaze.


Ingredients

Peach Topping:

3 cups fresh peaches, peeled and sliced

1/3 cup granulated sugar

1/4 tsp ground cinnamon

1/8 tsp ground nutmeg

pinch of kosher salt

1 tsp fresh lemon juice

1 1/2 tsp cornstarch

1 tbsp water

Cookie Dough:

3 cups all-purpose flour

1 tsp baking powder

1/4 tsp baking soda

1 1/4 tsp kosher salt

1 1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1 cup butter, cold and cubed

3/4 cup light brown sugar

1/2 cup granulated sugar

2 large eggs, cold

2 tsp vanilla extract

Glaze:

1 1/2 cup confectioner’s sugar

1 1/2 tsp vanilla extract

4 drops peach concentrate

2 tbsp water


Instructions

1. Simmer peaches, sugar, cinnamon, nutmeg, salt, and lemon juice; stir in cornstarch/water mixture until thickened; cool completely.

2. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg; cut in cold butter until crumbly.

3. Mix in brown sugar, granulated sugar, cold eggs, and vanilla until a thick dough forms.

4. Scoop dough into balls, flatten, and create an indentation in the center of each.

5. Fill centers with cooled peach topping and bake at 350°F until edges are golden.

6. Whisk glaze ingredients and drizzle over cooled cookies.

Notes

Keep butter and eggs cold to ensure the cookies don’t spread. If the topping is too liquid, it will make the cookies soggy, so ensure it is fully thickened.
