Ingredients
4 boneless skinless chicken breasts or thighs
3 ripe peaches, sliced
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon honey
1 tablespoon balsamic vinegar
Fresh parsley for garnish
Instructions
1. Season chicken with paprika, thyme, salt, and pepper.
2. Sear chicken in olive oil until golden brown.
3. Add garlic and peaches to the skillet.
4. Drizzle honey and balsamic vinegar over chicken and peaches.
5. Cook until chicken is fully cooked and peaches are caramelized.
Notes
Use ripe but firm peaches.
Best served warm.
