Ingredients
Scale
2 cups cream
½ cup maple syrup
4 egg yolks
¼ cup sugar
1 tsp vanilla
¼ tsp salt
3 tbsp sugar for topping
Instructions
1. Heat cream and syrup
2. Whisk eggs and sugar
3. Combine mixtures
4. Strain and pour into ramekins
5. Bake in water bath
6. Chill
7. Caramelize sugar and serve
Notes
Use pure maple syrup
Do not overbake
Chill well before serving
Torch sugar just before serving
