Description

Juicy Hawaiian Huli Huli grilled chicken marinated in pineapple, soy sauce, garlic, and ginger, then grilled with a sweet caramelized glaze.


Ingredients

2 1/2 pounds chicken thighs or breasts

1 cup pineapple juice

1/2 cup soy sauce

1/3 cup brown sugar

1/4 cup ketchup

3 tablespoons rice vinegar

3 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons olive oil

1 teaspoon sesame oil

1/2 teaspoon black pepper


Instructions

1. Mix all marinade ingredients.

2. Marinate chicken for 2–8 hours.

3. Preheat grill and oil grates.

4. Grill chicken, basting while cooking.

5. Rest before serving.

Notes

Marinate overnight for best flavor.

Do not reuse raw marinade.

Use thighs for juicier results.
