Description

Ingredients

3 eggs

3 egg yolks

3/4 cup granulated sugar

1/2 cup fresh grapefruit juice

1 tablespoon grapefruit zest

6 tablespoons unsalted butter

Pinch salt


Instructions

1. Prepare and chill tart dough.

2. Bake tart shell until golden.

3. Whisk curd ingredients together.

4. Cook until thickened.

5. Whisk in butter until smooth.

6. Strain curd.

7. Fill tart shell.

8. Chill until set.

9. Garnish and serve.

Notes

Use fresh grapefruit juice.

Strain curd for smooth texture.

Chill thoroughly before slicing.
