Warm ginger-spiced cobbler made with juicy peaches and blackberries under a golden buttery topping.
Ingredients
4 cups peaches sliced
2 cups blackberries
1/3 cup sugar
1 tablespoon lemon juice
1 teaspoon ginger
1/2 teaspoon cinnamon
2 teaspoons cornstarch
1 cup flour
1/4 cup sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 cup butter
1/2 cup milk
1 teaspoon vanilla
Instructions
1. Mix fruit filling.
2. Transfer to baking dish.
3. Mix dry topping ingredients.
4. Cut in butter.
5. Add milk and vanilla.
6. Top fruit with batter.
7. Bake until golden.
8. Cool and serve.
Notes
Use ripe fruit.
Do not overmix batter.
