Description
Chewy bakery-style giant chocolate chip cookie cake loaded with chocolate chips, decorated with rich buttercream and colorful sprinkles.
Ingredients
1 cup unsalted butter, softened, plus more for greasing pan
3/4 cup granulated sugar
1 1/3 cups packed light brown sugar
2 large eggs, cold
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup chocolate chips
Vanilla or chocolate buttercream frosting, for decorating
Assorted sprinkles, for decorating
Instructions
1. Preheat oven to 350°F (175°C) and grease a 12-inch pizza pan or 9×13-inch cake pan, lining with parchment paper.
2. Beat softened butter, granulated sugar, and brown sugar with an electric mixer for 2 minutes until creamy.
3. Beat in cold eggs one at a time, then mix in vanilla extract until incorporated.
4. Whisk flour, baking soda, baking powder, and salt in a bowl; fold into wet dough on low speed just until combined.
5. Gently stir in chocolate chips, then press dough evenly into the prepared pan.
6. Bake for 20 to 25 minutes until edges are golden, cool completely, and pipe with frosting and sprinkles.
Notes
Use cold eggs to keep cookie thick and chewy. Cool completely before decorating with buttercream.
