Description
Creamy garlic Parmesan pasta with tender summer squash, fresh garlic, and a light cheesy sauce.
Ingredients
8 ounces pasta
2 summer squash sliced
3 tablespoons olive oil
4 cloves garlic
1/2 teaspoon red pepper flakes
1/2 cup Parmesan cheese
1/2 cup cream or milk
Salt and pepper
1/4 cup pasta water
2 tablespoons parsley
Lemon zest optional
Instructions
1. Cook pasta and reserve water.
2. Sauté squash in olive oil.
3. Add garlic and cook briefly.
4. Stir in cream.
5. Add pasta and toss.
6. Mix in Parmesan and pasta water.
7. Season and garnish.
8. Serve warm.
Notes
Do not overcook squash.
Use pasta water for silky sauce.
Add protein if desired.
Best served fresh.
