Description
Garlic butter chicken with zucchini and corn made in one skillet with juicy chicken, sweet corn, and tender zucchini in a rich buttery garlic sauce. A quick and easy weeknight dinner.
Ingredients
4 boneless skinless chicken breasts or thighs
2 medium zucchinis, sliced
1 1/2 cups corn kernels
4 tablespoons butter
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 tablespoon lemon juice
Fresh parsley for garnish
Instructions
1. Season chicken with spices.
2. Sear chicken in skillet until golden and cooked through.
3. Melt butter and sauté garlic.
4. Add zucchini and corn and cook until tender.
5. Return chicken, add lemon juice, and serve warm.
Notes
Best served fresh.
Do not overcook zucchini.
Pairs well with rice or pasta.
