Gazpacho – a chilled tomato soup made with fresh vegetables and olive oil.
Ingredients
Scale
4 cups tomatoes
1 cucumber
1 bell pepper
¼ cup onion
2 cloves garlic
3 tbsp olive oil
2 tbsp vinegar
½ tsp salt
¼ tsp pepper
1 cup water
Instructions
1. Blend vegetables
2. Add oil and vinegar
3. Adjust consistency
4. Chill
5. Serve cold

Use ripe tomatoes
Chill well
Adjust texture
