Description

Fresh summer corn salsa made with sweet corn, tomatoes, peppers, onion, cilantro, and lime juice for a bright and zesty no-cook dip or topping.


Ingredients

Scale

2 cups corn kernels

1 cup cherry tomatoes, diced

1/2 red onion, chopped

1 jalapeño, chopped

1/2 cup red bell pepper, diced

1/3 cup cilantro

2 tablespoons lime juice

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Combine corn and vegetables in bowl.

2. Add cilantro and mix well.

3. Whisk lime juice and oil with seasoning.

4. Pour over salsa and mix.

5. Chill before serving.

Notes

Best served fresh.

Adjust spice to taste.

Use grilled corn for extra flavor.
