A light no-bake watermelon pie with fluffy whipped filling and a buttery graham cracker crust.
Ingredients
1 1/2 cups graham cracker crumbs
1/3 cup melted butter
2 tablespoons sugar
2 cups watermelon puree
8 ounces cream cheese
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon lemon juice
2 teaspoons gelatin optional
Instructions
1. Mix graham cracker crust ingredients and press into pan.
2. Blend watermelon into puree.
3. Beat cream cheese and sugar until smooth.
4. Add watermelon, vanilla, and lemon juice.
5. Whip cream until fluffy.
6. Fold cream into mixture.
7. Pour into crust.
8. Chill until set.
9. Serve cold.
Notes
Strain watermelon for smooth texture.
Chill at least 4 hours.
Add gelatin for firmness.
Serve well chilled.
