Description
An elegant French-style tart featuring a tender almond shortbread crust, smooth frangipane almond cream, fig spread, and fresh quartered figs toasted with sliced almonds.
Ingredients
Tart Dough:
8 tablespoons unsalted butter, softened
¼ cup sifted powdered sugar
1 large egg yolk
1–1/2 teaspoons heavy cream
¼ teaspoon vanilla extract
1 cup all purpose flour
¼ cup sifted almond flour
pinch kosher salt
Almond Cream:
8 tablespoons unsalted butter, room temperature
½ cup granulated sugar
2 large eggs
½ teaspoon vanilla extract
¼ teaspoon almond extract
1 cup sifted almond flour
pinch kosher salt
To Assemble & Serve:
¼ cup fig spread
¾ pound fresh figs, trimmed and quartered
2 tablespoons sliced almonds
powdered sugar, for dusting
honey whipped cream
Instructions
1. Beat 8 tbsp softened unsalted butter and ¼ cup powdered sugar until smooth; mix in egg yolk, 1-1/2 tsp heavy cream, and ¼ tsp vanilla extract.
2. Stir in 1 cup all purpose flour, ¼ cup almond flour, and a pinch of kosher salt to form a dough; chill for 30 minutes, then press into a 9-inch tart pan and chill 15 minutes.
3. Cream 8 tbsp room temp unsalted butter and ½ cup granulated sugar; beat in 2 eggs, ½ tsp vanilla extract, and ¼ tsp almond extract, then fold in 1 cup almond flour and a pinch of salt.
4. Preheat oven to 375°F (190°C); spread ¼ cup fig spread over the crust bottom, then layer the almond cream evenly on top.
5. Press ¾ lb quartered fresh figs into the cream, top with 2 tbsp sliced almonds, and bake for 35 to 40 minutes until golden brown.
6. Cool completely, dust with powdered sugar, and serve with honey whipped cream.
Notes
Sift your almond flour to ensure a completely smooth almond cream. Allow the tart to cool fully so the frangipane sets for easy slicing.
