Description
Delightfully chewy and buttery shortbread bars layered with a quick, scratch-made fresh fig jam and finished with a rustic crumble topping.
Ingredients
Crust & Topping:
1/8 cup plus 1 tbsp sugar
3/4 cup all-purpose flour
1/4 cup packed light brown sugar
1/4 tsp salt
1/4 tsp baking powder
4 tbsp unsalted butter, chilled and cubed
1 egg yolk
1/2 tsp vanilla extract
Fig Jam Filling:
1 lb figs, stems removed, roughly chopped
2–3 tbsp sugar
splash of lemon juice
Instructions
1. Simmer chopped figs, 2-3 tbsp sugar, and a splash of lemon juice in a saucepan over medium heat for 10-12 minutes until thick and jammy.
2. Whisk all-purpose flour, sugar, brown sugar, salt, and baking powder together in a medium bowl.
3. Cut in the chilled cubed unsalted butter using your fingers until the mixture resembles coarse breadcrumbs.
4. Stir in the egg yolk and vanilla extract with a fork until a uniform, clumpy dough forms.
5. Preheat oven to 350°F (175°C) and grease or line a small loaf pan with parchment paper.
6. Press two-thirds of the clumpy dough firmly into the pan bottom, spread the fresh jam evenly on top, and scatter the remaining dough as a crumble.
7. Bake for 25 to 30 minutes until the crumble top is deep golden brown; cool completely before slicing into squares.
Notes
Keep your butter cubes ice cold until the exact moment you mix them to ensure a flaky crust. Let the bars cool fully in the pan so they cut into clean squares.
