Description
An exceptionally moist and naturally sweetened almond flour cake topped with fresh quartered figs, sliced almonds, and a sweet honey drizzle.
Ingredients
Cake Batter:
1 cup (100g) almond flour
1/2 cup (60g) all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/3 cup Greek yogurt
1/3 cup extra virgin olive oil
1/2 cup honey
2 large eggs
Topping:
8 fresh figs, quartered
1/4 cup sliced almonds
1 tablespoon granulated sugar
Instructions
1. Preheat oven to 350°F (175°C) and line an 8-inch round cake pan with parchment paper.
2. Whisk almond flour, all-purpose flour, ground cinnamon, baking soda, and kosher salt together in a large bowl.
3. Make a well in the center and add the Greek yogurt, extra virgin olive oil, honey, and large eggs.
4. Stir the ingredients together gently with a spatula just until a smooth, uniform batter forms.
5. Pour the batter into the prepared pan, arrange the 8 quartered fresh figs beautifully across the top, and scatter sliced almonds and sugar over them.
6. Bake for 35 to 40 minutes until golden brown and a toothpick comes out clean; cool and serve with extra honey and Greek yogurt.
Notes
Keep a close eye on the cake while baking and tent loosely with foil if the honey causes the top to brown too quickly. Use a fruity, mild extra virgin olive oil for the best flavor balance.
