Description
An easy and warm pear crisp with sliced pears, candied ginger, brown sugar, cinnamon, and a crunchy oat topping served with vanilla ice cream.
Ingredients
Topping:
1 cup rolled oats
⅓ cup brown sugar
½ cup all-purpose flour
1 teaspoon finely chopped crystallized ginger or to taste
1 teaspoon ground cinnamon
¼ cup butter
Fruit Layer:
2 tablespoons white sugar
2 tablespoons all-purpose flour
2 teaspoons finely chopped crystallized ginger or to taste
8 cups peeled and sliced pears
Serving:
1 pint vanilla ice cream
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking pan.
2. Toss 8 cups peeled and sliced pears with 2 tbsp white sugar, 2 tbsp flour, and 2 tsp chopped crystallized ginger; transfer to prepared pan.
3. Combine rolled oats, brown sugar, ½ cup flour, 1 tsp chopped ginger, and ground cinnamon in a bowl.
4. Cut in ¼ cup cold butter using a pastry blender or fingers until crumbly.
5. Scatter oat mixture over the fruit layer and bake for 35 to 40 minutes until golden and bubbling.
6. Let cool for 10 minutes, then serve warm with 1 pint vanilla ice cream.
Notes
Cut the butter in cold for the crispies oat topping. Let the crisp sit for 10 minutes after baking so the fruit juices thicken.
