Description
Ultra moist double chocolate zucchini bread made with cocoa powder, chocolate chips, and fresh zucchini for a rich fudgy texture.
Ingredients
1 3/4 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup oil or melted butter
3/4 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla
2 cups grated zucchini
3/4 cup chocolate chips
1/2 cup chocolate chunks
Instructions
1. Preheat oven and prepare loaf pan.
2. Mix dry ingredients in a bowl.
3. Whisk wet ingredients in another bowl.
4. Combine wet and dry mixtures.
5. Fold in zucchini and chocolate.
6. Bake until set and cool completely.
Notes
Do not overmix batter.
Do not squeeze zucchini unless very watery.
Cool before slicing.
Store tightly wrapped.
